This year as the temperature rises the need for yummy treats does as well. Here are some delicious baking ideas for the end of spring to early summer, to celebrate the nice weather. These are easy to make at home with things already found in your kitchen! This is a fun idea to do with friends or family; and can commemorate Mother’s and Father’s Day. Below is how to make three great treats. Enjoy :)).
Lemon Blueberry Muffins:
Ingredients:
- 1 ½ cups all-purpose flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ⅓ cup vegetable oil
- 1 egg
- ½ cup milk
- 1 tsp vanilla extract
- Zest of 1 lemon
- 1 cup blueberries (fresh or frozen)
Preheat the oven to 375°F (190°C). Line a muffin tin. Mix dry ingredients in a big bowl. In a separate bowl, whisk oil, egg, milk, vanilla, and lemon zest. Pour wet into dry, stir until just combined. Fold in blueberries. Scoop into muffin tin and bake 18–22 mins, until golden and springy on top.
Lemon Bars:
Ingredients
FOR THE CRUST –
- Cooking spray
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 1/4 cup powdered sugar, plus more for garnish
FOR THE FILLING –
- 2 cups granulated sugar
- 1/4 cup all-purpose flour
- 6 large eggs
- 3/4 cup lemon juice
- Zest of one lemon
Preheat oven to 350°. Spray a 9″-x-13″ baking pan with cooking spray. Line with parchment paper and spray parchment paper with cooking spray. Make the crust: In a large bowl using a hand mixer, cream together butter and sugar until light and fluffy, 2 to 3 minutes. Add flour and powdered sugar and beat until combined. Spread dough into the prepared baking pan and press to flatten. Bake until lightly golden and just set, 20 to 25 minutes. Remove from the oven and let cool for 30 minutes.
Make the filling: In a large mixing bowl, whisk together sugar, flour, eggs, lemon juice, and lemon zest and mix until fully combined. Pour filling over the crust, return to the oven, and bake until firm, about 25 minutes. Remove from the oven and refrigerate, 3 to 4 hours. Slice and garnish with powdered sugar.
Bumble Bee Cake Pops:
Ingredients :
- ½ cup Vegetable oil
- 1 cup Water
- Lollipop sticks
- Sprinkles
- 5 tbs vanilla Frosting
- 24 oz White candy melts
- 3 Eggs
- 1 tbs White crisco
- Edible marker
- ¼ tsp Gel food color
- 15 oz yellow cake mix
- Black decorating pen
- 18 White chocolate discs
Prepare the cake using the cake mix instructions listed on the box. Bake the cake in a 13×9 inch pan. Then, let the cake cool and start crumbling it and add frosting. Next, melt the candy discs and stir in gel or paste food coloring. Reserve the discs for wings of the bees. Then, form the balls by rolling the dough into circles. After, add the sticks and secure it with a little bit of melted chocolate coating. Next, dip the cake balls into melted coating. Then, form the wings by breaking pieces of the discs in half and secure it to the ball with melted candy coating. Lastly let them cool and you’re done!
