shamrock cookiesSaint Patrick’s Day is here! When I think of Saint Patrick’s Day, the color that immediately comes to mind is green. You can never go wrong with some delicious green cupcakes and frosted sugar cookies. Short on time? These are the perfect recipes for you!

Recipe #1: Cupcakes

1 package (18.25 ounces) white cake mix
1 ¼ cups water
⅓ cup vegetable oil
3 egg whites
8 drops green food coloring


  1. Preheat an oven to 350 degrees F. Line a standard muffin tin with paper cup liners.
  2. Beat the cake mix, vegetable oil, water, and egg whites until smooth. Fill the cupcake liners ⅓ full with white batter.
  3. Stir 4 drops of green food coloring into the remaining mixture. Pour ⅓ of the green batter into a resealable plastic bag and set aside.
  4. Mix more food coloring into the remaining bowl of green batter until it is a darker green and pour the batter into a resealable plastic bag.
  5. Cut a corner off the bag, stick the bag into the center of the white batter in the liner and squeeze out 2 tablespoons of green batter.
  6. Cut the corner off the bag with the lighter green batter, stick the bag into the center of the dark green batter in the liner and squeeze out 1 tablespoon of lighter green batter.
  7. Bake the cupcakes in the oven for about 15 to 20 minutes. Let cool completely before frosting.
  8. Decorate!

Recipe #2: Shamrock Cookies

1 ½ cups butter, softened
5 cups all purpose flour
2 teaspoons baking powder
4 eggs
1 teaspoon salt
1 teaspoon vanilla extract
2 cups white sugar
Icing (optional)
Sprinkles (optional)


  1. In a large bowl, mix together the butter and sugar until smooth. Then, beat in the eggs and vanilla.
  2. Combine the dry ingredients (flour, baking powder, and salt) in a separate bowl. Once combined, gradually add the dry ingredients to the wet ingredients until fully mixed.
  3. Cover the dough and place in the fridge to chill for about 1 hour (or overnight).
  4. Preheat oven to 400 degrees F.
  5. Roll out the dough on a floured surface until it is around ¼ to ½ inches thick. Using a shamrock-shaped cookie cutter, cut out the cookies and place 1 inch apart on a tray lined with parchment paper.
  6. Bake for 6 to 8 minutes. Cool completely.
  7. Decorate! Using green icing and sprinkles, decorate the cookies to your liking.
